Crock pot chili

I must say that a crock pot is definitely a solid investment. You just dump all the ingredients in and in a matter of hours… food is ready! Once of our favorite things to make in the crock pot is chili. Only warning is that it makes your whole house smell like deliciousness and makes you hungry. I suggest leaving the house. 🙂

Ingredients we use:

Can of black beans (from TJs)
Can of pinto beams (from TJs)
Can of corn (optional)
4-5 chopped tomatoes (vine or roma)
sometimes I’ll reduce the tomatoes and add in a can of stewed tomatoes.
1 chopped yellow onion
maybe a cup of chopped mushrooms (optional)
pre cooked and drained ground meat (chicken, beef- you pick)
chopped jalapeno (optional)
seasoning- salt, pepper, cayenne pepper.. i like to season as it cooks and again at the very end to taste.

Then when all the ingredients have been added, i just plug the crock pot into a timer for 6 hrs overnight (I have it on high until I go to bed and switch it to low) and I wake up to yummy chili. Make sure you close your bedroom door otherwise you wake up in the middle of the night hungry like i do.
