chinese cold noodle or 涼麵

In response of the request for more chinese food recipes, here is another addition. This is a simple and quick recipe for yummy cold noodles. You usually see these noodles everywhere in Taiwan from the local food carts. Now you can have your own at home.

It’s great to eat on this on warm summer nights. You can also add some shredded chicken to the recipe to make it a little more filling. Just eating the vegetables and noodles usually results in a hungry stomach in the morning… 🙂

Recipe (based on how much veggies you want):

-shredded carrots
-thinly sliced cucumber
-bean sprouts
-any kind of chinese noodle (not too thin). I will usually add some sesame oil or olive oil to the noodles after they have been drained so they don’t stick to each other.

sesame sauce recipe:

Add all ingredients to a large bowl to mix and

3 tbs sesame paste
4 tbs cold water
mix both of these two items well until no more lumps of the paste remain

2 tbs sesame oil
2 tbs soy sauce
1 tbs vinegar
1 ts suger
a little salt
minced garlic (optional- I usually leave in a separate bowl for those that want an extra kick)

Then just get a bowl, add the noodles, vegetables, and pour the sauce over. Mix and enjoy!
